What is bopis?

Bopis is a spicy dish made with minced pork heart and lungs cooked in ginger, garlic, onions, vinegar, and chili peppers.  Some add tomatoes and annatto powder for that reddish-orange color.

Bopis is a spicy dish made with minced pork heart and lungs cooked in ginger, garlic, onions, vinegar, and chili peppers.  Some add tomatoes and annatto powder for that reddish-orange color.

Materials

  • 1 kilo Nida Production Pang-bopis
  • ginger
  • garlic
  • onion
  • chili pepper
  • annatto water
  • laurel leaves
  • salt and pepper to taste (fish sauce is good too)
  • vinegar
  • minced carrots
  • water
  • minced raddish (Optional)

Instructions

  • Sautee minced ginger, garlic & onions.
  • Add chili pepper & put-in the minced pig’s lungs and heart. Stir occassionally. Cook for 5 minutes.
  • Add annatto water, dried bay leaves and 1 cup water. Simmer for 30 minutes.
  • Add minced carrots then season with salt and ground pepper.
  • Add 4 tablespoons of vinegar & cook for 10 minutes. Serve warm with rice.
